Morning protein pancakes

I am a morning person so I’ve never had any problems with waking up early and making breakfast (yes, only for myself…)  and enjoy every single minute (second) of the morning

I tried to treat myself on Valentine’s morning so I made protein pancakes for my sweeter morning. Honestly, I am surprised how easy and tasty this recipe is. All preparing takes maybe 20 minutes. No sugar added,  no flour, no butter, therefore low-fat … but still so good.

I am sure you’ll appreciate this super easy recipe. Not only if you hit the gym every day but also it is a nice breakfast for your partner (I’ve got this idea because it’s Valentine’s day…..).

I have a little suggestion for you. Just a tiny tip which makes not only your pancakes better. …. 

One morning when you will know that you’ll have a little bit more time for yourself, take your time. Don’t rush. Take a shower, make a coffee or tea, read newspapers and finally make these pancakes and enjoy every and each second of the morning.  Trust me, all of these simple things will make your day a lot better, more active and therefore happier. Just start to be the morning person!

Ingredients:

  • Almonds – 1/2 cup
  • Protein powder – 3 Tbsp
  • Chia seeds – 1 Tbsp
  • 1 tsp cinnamon
  • Baking powder – 1 tsp
  • 2 eggs
  • coconut oil
  • fruits (blueberries, strawberries)
  • Greek yoghurt 0% fat
  • Agave syrup

 

  • Add all main ingredients (except coconut oil, fruits, Greek yoghurt, and syrup)  to the blender or just mix it in the bowl. Keep your blender on the high lever until the dough is smooth.
  • Now you have two options. An easier, and for me the better option, is to bake those pancakes. If you have special baking pancakes pan, you can do it easier and healthier. But if you don’t have it, just use the skillet and pour the dough straight into the skillet. Cook every single pancake about 3 minutes.  I coated the skillet with the coconut oil, but feel free to use another type of oil or just spray oil.
  • Serve with fruits and Greek yoghurt.

Lovely recipe, isn’t it? Of course, if you eat all 8 pancakes by yourself, they won’t make you slimmer, but definitely happier.
